Aubergine rolls with FITAKI

Spicy rolls filled with FITAKI cheese

Ingredients for 4 servings

FITAKI White Cheese 200 g

Aubergines 400 g

Bacon (cut into small cubes and fried) 20 g

Garlic 1 clove

Vegetable oil for frying 4 tablespoons

Carrot (cut into small pieces) 30 g

Parsley to taste


  • 1 Wash the aubergines, cut them lengthwise into thin slices, sprinkle with salt and leave for 30 minutes.
  • 2 Grate the FITAKI using a medium-size grater. Mix the cheese with the chopped garlic and carrots and season with pepper.
  • 3 Blot the aubergine slices with a piece of kitchen roll, fry them on both sides in vegetable oil and allow to cool. Place the aubergine slices on a plate and spread with the prepared filling and the fried bacon.
  • 4 Carefully roll the aubergines into rounds.
To add a bit of spicy heat to this dish, add several small pieces of chili to the cheese filling.
