
Starters – Greek platter

FITAKI White Cheese300 g
FITAKI Crème Classic125 g
Ajvar sauce2 tablespoons
Marinated bell peppers4
Cherry tomatoes 4
Cold-smoked ham 4 pieces
Marinated vine leaves (dolmas) 4
Small bunch of lettuce (little gem) 1
Olives 160 g
Basil half bunch
Vinegar, olive oil to taste
Salt and pepper to taste
Wooden skewers 4
Preparation
- Cut the FITAKI White Cheese into strips approximately 5 cm long and 1 cm wide.
- For the skewers: cut three strips of FITAKI White Cheese into six cubes. Insert a cube of cheese onto the skewer followed by a basil leave, a cherry tomato and a second cube of cheese.
- For the dolmas: spread the vine leaf out on a cutting board with the coarse side up, so that the end with the cut stalk points towards you. Place a strip of FITAKI White Cheese horizontally in the middle of the leaf. Fold up the bottom part of the leaf and then fold the sides over the cheese. Then roll up the rest of the leaf (like a roll).
- Stuffed pepper: stuff the marinated peppers with FITAKI White Cheese.
- Ham rolls: take a piece of ham and roll up strips of FITAKI White Cheese in it.
- Dip: mix FITAKI Crème with two tablespoons (from the top) of ajvar sauce and season with salt and pepper.
- Serve the prepared starters – all decorated with olives, lettuce leaves and basil – on a large plate. Drizzle some vinegar and olive oil on the lettuce leaves.
