
Aubergine rolls with FITAKI
Ingredients for 4 servings
200 g FITAKI White Cheese
400 g Aubergines
20 g Bacon (cut into small cubes and fried)
1 clove Garlic
4 tablespoons Vegetable oil for frying
30 g Carrot (cut into small pieces)
Parsley to taste
Preparation
- Wash the aubergines, cut them lengthwise into thin slices, sprinkle with salt and leave for 30 minutes.
- Grate the FITAKI using a medium-size grater. Mix the cheese with the chopped garlic and carrots and season with pepper.
- Blot the aubergine slices with a piece of kitchen roll, fry them on both sides in vegetable oil and allow to cool. Place the aubergine slices on a plate and spread with the prepared filling and the fried bacon.
- Carefully roll the aubergines into rounds.
To add a bit of spicy heat to this dish, add several small pieces of chili to the cheese filling.
