Aubergine rolls with FITAKI

Ingredients for 4 servings

200 g FITAKI White Cheese

400 g Aubergines

20 g Bacon (cut into small cubes and fried)

1 clove Garlic

4 tablespoons Vegetable oil for frying

30 g Carrot (cut into small pieces)

Parsley to taste

Preparation

  1. Wash the aubergines, cut them lengthwise into thin slices, sprinkle with salt and leave for 30 minutes.
  2. Grate the FITAKI using a medium-size grater. Mix the cheese with the chopped garlic and carrots and season with pepper.
  3. Blot the aubergine slices with a piece of kitchen roll, fry them on both sides in vegetable oil and allow to cool. Place the aubergine slices on a plate and spread with the prepared filling and the fried bacon.
  4. Carefully roll the aubergines into rounds.

To add a bit of spicy heat to this dish, add several small pieces of chili to the cheese filling.
